What is Garden To Table? Garden To Table is a movement in Dakota County, sponsored by the Eagan & Lakeville Resource Centers, which promotes improved access to fresh garden produce for families who are in need of food support. Improved access can be defined through the following:

Adopt-A-Plot: Food shelf families can Adopt-A-Plot at community gardens sponsored by Eagan & Lakeville Resource Centers. Families can adopt a 5’ x 20’ plot for no charge. Seeds, plants, tools, gardening classes, monthly meals are also provided at no cost through generous grants.

Mission Gardens: Mission Gardens (sometimes called Giving Gardens) are community gardens located at churches, businesses, schools and private homes which grow produce to give to the Eagan & Lakeville Resource Center food shelves to distribute to families in need.

How do food shelf families go about adopting a plot? Sign-up sheets and applications are located at the greeter desk at the Pantry of the Eagan and Lakeville Resource Centers. Applications are due by April 15, otherwise the plot will be given to another family on the waiting list.

I am a volunteer, how do I get involved? There are many ways you can join in! As a volunteer, you can co-garden with families, participate in work days in the gardens, tend to compost bins, grow a row or two at your home garden or church plot and donate the harvest to the Pantry, help glean local orchards in the early autumn, or help put gardens to bed in the fall. I am a church, business, school or community member who would like to plant a row or a garden for the ERC/LRC food shelves, how do I get started? To get started, contact Lisa at 651-605-2881, or email garden@eaganrc.org to express your interest. We have plenty of information to get you started and to assure a successful project.
